Lamb Bhuna

4.4. Food (31)Lamb Bhuna is a classic Indian recipe; lamb sautéed in onions, tomatoes and a fine selection of Indian herbs and spices slow cooked to get a flavoursome aromatic and spicy curry. The meat cooks in its own juices, which is what gives the deep flavour. It is a bit time consuming, but the end result is delicious and will be worth all your effort.

Ingredients

Marinade:

  • Lamb Chops (500 grams)
  • Yoghurt (150 ml)
  • Lime Juice (5 tbsp.)
  • Red Chilli Powder (2 tbsp.)
  • Paprika (1/2 tbsp.)
  • Coriander Powder (1/2 tsp.)
  • Turmeric Powder (1/2 tsp.)
  • Cumin Powder (1/2 tbsp.)

Gravy:

  • Onion (2 or 3 finely chopped)
  • Tomato (1 medium chopped)
  • Ginger (1 small piece)
  • Garlic (2 pods)
  • Cloves (4)
  • Fennel Seeds (a few)
  • Garam masala (1/2 tsp.)
  • Meat Masala (optional) (1 tbsp.)
  • Coriander leaves (1/2 cup, chopped)
  • Curry leaves (a few)
  • Water (1/2 cup, add more if required)
  • Oil (5 tbsp.)
  • Salt to taste

Method:

  • Clean lamb chops in water
  • Mix all the ingredients in the marinade, add lamb chops, mix well and refrigerate for at least 2 hours or more
  • Make a fine paste of ginger and garlic
  • Heat oil in a saucepan, add onion salt and sauté until it turns golden brown
  • Add cloves, cinnamon sticks, cardamom, fennel seeds, garam masala, meat masala and sauté for another 2 minutes
  • Add tomato, ginger garlic paste and sauté ( for about 5 – 10 minutes) by which the oil will start to separate
  • Add the marinated lamb chops, water and bring it a boil. Leave on high flame for about 30 minutes
  • Lower the flame, simmer for another 30 minutes by stirring occasionally
  • Sprinkle half of the coriander leaves, mix them well into the curry and allow it to simmer on low flame for another 30 minutes
  • Continue stirring on low flame and simmer until lamb is well done and the water is reduced to a thick consistency
  • Sprinkle the remaining coriander leaves and serve hot with Roti / Chapatti / Rice
