Chilli Gobi

4.4. Food (30)Chilli Gobi is a mixture of Indian and Chinese cuisines made famous in the dhabas (food joints) of northern India. This is best eaten by combining with Rotis, Fried Rice or Noodles. This dish can be prepared with an  inclination towards Indian cuisines or Chinese cuisines depending on the herbs being added (i.e. Coriander leaves or Spring Onions or Celery). Adapted from ShowMeTheCurry, I have done minor modification by using masalas instead of certain sauces. This helps to keep the spice up

Ingredients

  • Cauliflower ( ½ )
  • All-purpose flour (Maida) (5 tbsp.)
  • Corn starch (3tbsp. optional)
  • Salt (¼ tsp.)
  • Black pepper (¼ tsp.)
  • Water (¼ cup + 2tbsp.)
  • Oil for deep frying
  • Oil (1tbsp.)
  • Onion (½ medium, chopped)
  • Garlic (3 large cloves, chopped)
  • Green chilli (1, chopped)
  • Capsicum (½ chopped)
  • Tomato ketchup (2 tbsp.)
  • Red chilli sauce (2 tbsp. refer note)
  • White vinegar (2 tbsp.)
  • Soy sauce (4 tsp.)
  • Water (4 tbsp.)
  • Corn starch (2 tsp. optional)
  • Spring onion (2 stalks, chopped)

Method

For sauce:

  • Heat oil in a pan. Add chopped onion, green chilli and garlic
  • When the onion turns golden yellow add capsicum and sauté well
  • Now add ketchup and also add red chilli sauce. Stir well
  • Next add soy sauce and vinegar
  • Finally add some water and to that corn starch to make the sauce thicker. The sauce is ready

For frying:

  • Mix all-purpose flour, corn starch, black pepper and salt and add water slowly and make a thick batter
  • Heat oil in a pan. Dip the cauliflower into the batter and deep fry or shallow fry according to your requirement and keep it aside
  • Next heat the sauce for 2 minutes. Add the fried cauliflower into the sauce and mix well
  • Garnish with spring onions and also coriander leaves

Note:

If Red Chilli Sauce is unavailable, you may also mix Kashmiri Chilli Powder (1/2 tsp.) and White Vinegar.

Please note that it is not required to use White Vinegar again in Step 4 of the preparation of Sauce if the above method is used
